Salmon in mango-curry sauce

Ingredients for 2 servings:

  • 100 g SONKO black rice
  • 2 salmon fillets (2 x 150 g)
  • 3 tablespoons of olive oil
  • salt, curry spice
  • 1/2 red onion
  • 1 ripe mango (you can also use canned mango pulp)
  • 1 clove of garlic
  • optional, half a chili pepper
  • some water
  • 2 tablespoons of fish sauce
  • juice of 1/2 lime
  • 50 ml coconut milk or cream
  • chives

Preparation:

1. Start cooking the rice in salted water - it needs 25 minutes.

2. While the rice is cooking, rub the salmon fillets with 1 tablespoon of olive oil, salt and curry powder. Bake the salmon at 190°C for 15 minutes.

3. To make the sauce, fry the onion in a pot with 2 tablespoons of olive oil, add garlic and chili and fry for a while. Then add mango, pour some water and fish sauce and season with curry spices. Cook for about 5 minutes and finally add coconut milk and lime juice.

4. Place black rice on a plate, top with salmon, pour mango curry sauce and sprinkle with chives.
