Gluten is a cereal plant protein . It was found in cereals such a wheat, barley, rye and oats.

 

Gluten in combination with water produces a sticky dough, soft and spongy once baked. Wheat or rye flour is commonly used in the baking industry, which means that most of baking products contain gluten or its trace amount.

Most people are capable of digesting gluten products without any health complaints but approximately 1% of population is allergic to gluten. The condition caused by gluten intolerance is called coeliac disease in which gluten causes disappearance of the mucosa of the small intestine, malabsorption of food and progressive destruction of the body. People with gluten intolerance must adhere to a strict, lifelong gluten-free diet and eat food made exclusively from cereals such as rice, corn, buckwheat, amaranth, soy and millet. It is only with the aid of gluten-free diet that the villi in the small intestine are gradually restored.
