Gluten-Free Products Produkty bezglutenowe

Vegetable proteins found in cereals such as wheat, barley, rye and oats are known as gluten. In combination with water, gluten adds stickiness and viscosity to dough, and other mixtures made from these cereals and then plumpness after baking them. Wheat or rye flour is widely used in the baking industry.

As a result, the majority of baked products contain gluten or traces of it. Most people absorb gluten products without any digestive problems. However, some people (estimated to be around 1% of the population) are allergic to gluten.

 

Coeliac disease is caused by gluten intolerance. In people suffering from coeliac disease, the consumption of foods containing gluten damages the mucous membrane of the small intestine, which causes problems in the absorption of nutrients and other complications. People with gluten intolerance must follow a strict gluten-free diet for the rest of their lives and consume products made only from cereals such as rice, corn, buckwheat, amaranth, soybeans and millet. By maintaining a gluten-free diet, the villi in the small intestine are regenerated.
